Hoping you had the best weekend. After a three day weekend, Tuesday is the new Monday - but I love it for 3 reasons...
1. A fresh start.
2. The chance to set a new tone for the rest of the week.
3. A great day to be alive.
There's a 4th reason this Tuesday though, and that is the fact that I will be sharing my favorite Blueberry Muffin Recipe with you all on the blog today! Don't they look spectacular?
I absolutely love muffins. They make the perfect breakfast, a great snack, and heck... if they're fresh out of the oven, I won't lie, dinner never looked better.
Did you know that blueberries are often referred to as a superfood? Yes, that's right! They're packed with a variety of vitamins (to name a few: Vitamin K1, Vitamin C, & Manganese) that have health benefits for both the heart & brain.
Delicious & nutritious... doesn't get much better than that!
Ready for the recipe?
*This is your reminder to preheat your oven to 400 degrees F.
Ingredients:
- 1 1/2 cups of all-purpose flour
- 3/4 cup of granulated sugar
- 1/2 teaspoon of kosher salt
- 2 teaspoons of baking powder
- 1/3 cup or vegetable oil
- 1 large egg
- 1/2 almond milk
- 1 1/2 teaspoon vanilla extract
- 1 cup of frozen blueberries (do not thaw)
Making the batter:
Whisk in large bowl...
- Flour
- Sugar
- Baking powder
- Salt
In a separate bowl, mix together...
- Egg
- Almond Milk
- Oil
- Vanilla
Add mixture to dry ingredients, mixture should be thick...
- Fold in blueberries
Baking the muffins:
- Fill paper liners with batter
- Sprinkle granulated sugar on top
Cook for 15 to 20 minutes at 400 degrees F, move to cooling rack [after checking with toothpick].
Now, it's all about your presentation! I mean... if there's any left to present that is. These truly are so delicious - I wouldn't blame you for eating them all!
